We often say that our Sirloin steaks are better then most other people’s New York Striploins! What with the minimum of 9 weeks aging (63 days), and American Choice beef – it is not hard to imagine. This is an often underrated steak, that can either feed the hungriest of appetites, or quite the crowd pending on how we cut it, where average steak weights range from around 2lbs, for a 1 1/4″ thick steak to 4 to 6 lbs when we cut 2″ to 4″ thick steaks or greater.
